About The Chef



Chef Jimi Lasquete composes innovative farm-to-table fare inspired by island culinary traditions. The Lanai City Bar & Grille menu showcases Lasquete’s passion for fresh and local ingredients, like Calamansi and Pohole fern, which he uses to create dishes that delight all the senses.

Lasquete was born and raised in the Bay Area among a large Filipino family. He learned to cook under the tutelage of his father, an accomplished chef. The chef fondly recalls his culinary roots originating in the family garden, where he chased rabbits and tended to his father’s vegetables. Lasquete was drawn to the island of Lanai for its close-knit community and agricultural history, which remind him of his own upbringing.

Lasquete has worked in fine dining restaurants from Northern California to Maui, and imagines Lanai City Bar & Grille as his piece de resistance -- a culmination of his career as a chef and an opportunity to bring his unique style of food to Lanai and its visitors.
